Osteria Dallatana is an ancient building, dating back to the 1600s, which was built by Pallavicino, Lords of Busseto, conceived as a mill, which remained in operation until the 1950s. After the disused and dilapidated business has ceased, our buying and restructuring have been a challenge and an adventure together to us. A challenge because we needed a very long time to renovate.
Originally, we were looking for ancient cellars to refine our Culatelli di Zibello PDO, within an ideal, natural and alive microclimate. For this reason, we have kept the thick walls, pillars, vaults, the loft above the channel and the same bricks, floors and old beams that, having absorbed the humidity of the centuries, are still ideal today to slowly cure our Culatelli di Zibello PDO. From here, the adventure is born: to transform the mill’s rooms into a satellite for our products tastings, produced in our laboratory and precisely cured in these cellars, in order to recognize in our wooden charcuterie boards the typical flavors and tastes of our land, the Lowlands of Parma.
